Aaloo ki Tahiri
This is my mom's recipe and one of my super favorite dish, my comfort food.
Recipe:
Ingredients:
- 1 cup rice (pre-soaked at least half an hour)
- 1½ tsp. garlic & ginger paste
- 1 tsp. salt (according to taste)
- ½ tsp. turmeric powder
- 1 tsp. red chili powder (or to taste, I like it spicy)
- 1/4 tsp. black pepper powder
- ½ tsp. all spice powder
- 6 cloves
- 1 black cardamom
- 1 stick of cinnamon
- 1 large tomato
- 2-3 green chilies and parsley finely chopped
- 3-4 potatoes peeled and cut in half
- 1 medium sized onion
- 3-4 tbs. oil
- ½ tsp. cumin seeds
- 6 whole black pepper
- Boneless chicken pieces
- Peas
- I also add crushed chili flakes
Method:
- Add whole spice in hot oil and after stirring add sliced onions.
- Fry onion in oil until golden brown. Keep half of it aside.
- Add all spices (including crushed chili flakes) and chopped tomato and cook on medium flame until the spices are well mixed and the tomato has softened.
- Add the potatoes, peas and chicken and keep stirring.
- Add 1 glass of water, cover and cook till the potatoes, chicken and peas are almost soft.
- Add in the pre-soaked rice and water so much so that it reaches 1 1/2 cm. above the surface of the rice.
- Cover and cook on high heat until the rice is soft.
- Cover it with caramelized (fried) onion which was set aside, chopped green chilies and parsley and then lower the heat to the minimum and cover the lid to steam.
- Remove from heat after 5 minutes.
- Serve with Raita and salad. 😄
