Chicken Vegetable Stir-fry
Recipe:
Ingredients:
- 1tsp finely chopped ginger & garlic
- 1 chicken breast, cut into thin slices
- Spring onions,
- Green chilies,
- Red, yellow and green capsicum,
- Snap beans
- Cabbage
- 1 tsp soy sauce
- ½ tsp black pepper
- 1tbsp cornstarch
- ½ cup chicken broth (or 1 Knorr chicken cube)
- 2 tbsp oil
Method:
- Heat oil in a wok or large skillet over medium-high heat.
- Add garlic & ginger and cook for 1 minute.
- Add chicken and stir-fry for 3-4 mins till it starts turning golden brown.
- Add cabbage & black pepper powder and stir-fry for
further 3-4 mins.
- Add rest of the vegetable and keep stirring for 2 mins.
- Add soy sauce and cook for 2 mins until vegetables are crisp-tender.
- Dissolve cornstarch in chicken broth in a small bowl and add to wok.
- Simmer 2 minutes until sauce is transparent and thick.
- Serve with fried rice.
