One Pan Chicken & Potato Bake
Recipe:
Ingredients:
- One chicken leg quarter
- 1tsp ginger garlic paste
- ½ lemon juice
- 3-4 tbsp oil
- Shan / National Chicken Broast Mix, ½ pack
- 2 medium or 3 small potatoes, sliced
- Salt and chili flakes – to taste
- ½ tsp crushed dried parsley
Method:
- Pre-heat oven at 180’C.
- Marinate chicken leg quarter in ginger garlic paste & lemon for 30 mins.
- Mix broast mix in 2-3 tbsp oil and coat chicken in this mixture and marinate further for 30 mins.
- Line a baking tray with foil and spray it with oil.
- In a bowl, toss potato slices with salt, chili flakes, crushed dried parsley and 1-2 tbsp oil.
- Place chicken piece in the middle of baking tray, cover the rest of pan with preferably single layer of potatoes.
- Bake it for 15-20 mins.
- Take the tray out, flip the chicken over carefully and stir & turn potato slices too. You’ll see the juices running which will enrich the potatoes.
- Return baking tray into the oven and bake for further 15-20 mins or until cooked.
